What Actually Is Ceremonial-Grade Matcha?

Ceremonial-grade matcha represents the highest quality of Japanese green tea powder.
Unlike culinary-grade matcha (often used for baking or heavily sweetened drinks) ceremonial matcha is designed to be enjoyed traditionally: whisked simply with water or lightly paired with your favourite milk.
The difference begins long before the tea reaches the cup.
The youngest tea leaves are shade-grown before harvest, allowing the plant to develop deeper chlorophyll levels, more complexity, and its unmistakable vibrant green colour. After harvesting, the leaves are carefully stone-ground into an ultra-fine powder.
The result is a matcha that feels smooth, delicate, naturally sweet, and deeply layered, without the bitterness many people mistakenly associate with matcha.
Good ceremonial matcha should taste clean, vegetal, slightly creamy, and softly umami.

Why We Chose Ceremonial Matcha at Concept 30
When we began building Concept 30, we knew every ingredient needed intention behind it.
The same philosophy that guides our coffee sourcing also shapes our approach to matcha: transparency, quality, balance, and respect for origin.
We wanted a matcha that worked beautifully both traditionally and creatively, whether served as a minimalist iced matcha or paired with ingredients like coconut, strawberry, vanilla, or functional wellness blends.
But above all, we wanted something people could genuinely feel good drinking.
Ceremonial-grade matcha offers a slower, more balanced energy compared to coffee. Thanks to its natural L-theanine content, the caffeine release tends to feel calmer and more sustained focused rather than intense.
For many of our guests, it has become part of a daily ritual:
a morning reset, an afternoon pause, or simply a quieter alternative to another espresso.
More Than a Wellness Trend

One of the things we’ve always tried to avoid at Concept 30 is serving products simply because they’re fashionable.
If something goes onto our menu, it has to earn its place.
What we appreciate about matcha is that it sits naturally within the way we already think about food and hospitality: intentional ingredients, slower rituals, and drinks that make people feel genuinely nourished rather than overloaded.
That’s also why we avoid overcomplicating it.
Some of our most popular drinks are still the simplest:

Málaga’s café scene has evolved enormously over the past few years, and it’s exciting to see more people becoming curious about specialty tea and matcha culture alongside specialty coffee.
